Not every staff member will need to take the Managers course, but please remember you are responsible for ensuring that your business needs, where food safety is concerned, is in compliance with your county's requirements.
The ServSafe® Manager Course
Although the ServSafe® Managers course is sixteen hours, our training is done in one eight hour day. Prior to coming to class, you should complete the first eight hours as self-study reviewing your study guide or ServSafe® Manager text book. It covers critical principles including: personal hygiene, cross contamination, time and temperature, receiving and storage, food safety management systems, training hourly employees, and more. The remaining eight hours will be covered in class and will include lecture, videos, Q and A, quizzes and of course the exam. The ServSafe® exam consists of 90 multiple choice questions and you must receive 75% to pass the exam and receive a ServSafe® Food Safety Certificate. All tests are graded by the National Restaurant Association Education Foundation (NRAEF) and results are available immediately for online exams or in 10 business days for printed exams.
The ServSafe® Food Handler Course
The ServSafe®Food Handler Course is a two hour course. It is specifically designed for for entry-level professionals in the food service industry, such as servers, chefs, cooks, cashiers, and even c-store clerks. Upon successful completion of the ANSI ASTM 2659 accredited Food Handler course and 40-question exam which covers only the basic food safety principles, the employee will receive a Certificate of Achievement from the National Restaurant Association that can be printed from a secure section of the website. This course is for educational purposes only and will not satisfy most local regulatory compliance requirements.
The ServSafe® Exam Only
The Exam Only option is for anyone needing to retest or anyone operating their business in a county that allows their food service personnel to recertify by taking the exam only rather than having to retrain. For those retesting, you must have proof that you have already taken the training either online or in an instructed class. You will be given two hours to complete the 90 multiple choice question exam and results are available immediately following completion of the exam. Please note that the online exam is not acceptable in all counties and it is your responsibility to check with your local regulatory authorities to verify acceptance. Do not rely solely on information published on the ServSafe® website.
